Chocolate Oat Cookie Recipe (vegan friendly)


I have such a sweet tooth. So whenever I find healthy dessert recipes I have to try them. Deliciously Ella is everywhere at the moment and for good reason. Her plant based unprocessed natural way of eating has loads of people feeling better. Here is my version of her chocolate oat cookie recipe. Enjoy.

You will need:

  • 1 and a half cup of oats
  • 2 Tspn coconut oil
  • 2 heaped Tspn of cacao powder
  • 2 cups of red beans, drained (the orginal recipe calls for black beans, I couldng’t find these at all. In Taiwan they make a delicious sweet red bean paste, so I thought I would give red beans a try)
  • Half a cup mayple syrup (you can use honey. Add more if you like your cookies on the sweet side)

And here’s how you make them:

  1. Set the oven to 180C
  2. Add all of the ingredients exceot the oats into a food processor and blend until smooth
  3. It will look like choclatey goodness
  4. Stir in the oats
  5. Grease a baking tray with coconut oil
  6. Using 2 tablespoons scoop and flatten the mixture on to the baking tray (you can make them as big or as small as you like)
  7. Cook for 20 minutes
  8. Allow to cool
