Carb free baby marrow pasta with lemon carbonara sauce

I’ve decided to set myself a little challenge. I’m going to cook a new meal every week. I’m no master chef but I can make the basics. I tend to stick to the few recipes that I know – chicken pie, lasagne, Thai curry, fish, mince and chicken dishes. It is time for me to broaden my culinary experiences.

My roommate religiously buys Taste magazine and has a habit of collecting amazing recipes and adding them to her recipe books. She makes amazing food too. This is probably also one of the reasons why I wanted to up my cooking game. When your roomie makes ricotta cakes on a bed of cucumber, you know that chicken and veg just won’t do.

 

Start like this:

  • 8 baby marrows, cut with a peeler to make pasta like ribbons
  • Salt, which you soak the baby marrows in to make them harder
  • Olive oil, which you use to fry the washed baby marrow in

For the sauce:

  • a lemon, only the rind
  • 4 cloves of garlic, or crushed garlic (sacrelidge I know)
  • Some chilli flakes (to your liking)
  • Anchovies (as many as you would like. For a veggie version, leave this out)
  • Fry all of these up for about 2 minutes
  • Mix 1 cup of cream and 2 eggs in a bowl (use a whisk or a fork)
  • Remove the pan from the heat and stir in the cream mixture
  • Add your parmesan (The more you add, the thicker the sauce will get)

The grand finale:

  • Add the baby marrow ribbons to the sauce
  • Add some capers, salt and pepper and dash of freshly squeezed lemon
  • Now feed your face with a carb free meal that is almost like pasta

Slice up the baby marrow with a veg peeler. Soak in salt for a few minutes. Wash thouroughly. This helps the marrows become firm. Fry in olive oil.
fry up
Fry up the anchovies, garlic, lemon rind, chilli flakes in some olive oil.
add the cream mixture
Mix the cream and eggs with a fork in separate bowl. Add the cream mixture to the anchovies, stirring while doing so.

Remove pan from the heat and add in the parmesan. If you would like a thicker sauce, add more parmesan. Serve immediately with capers.
